I’m Rebecca, the creator and founder of Nourish by Rebecca.  I’m based in the beautiful Scottish Borders where I make my products and offer cooking workshops.

I have enjoyed cooking for as long as I can remember, although it wasn’t until I was diagnosed with gluten and dairy intolerances and had to overhaul my diet that I became more aware of how certain foods can be incredibly beneficial.

Changing my diet, not only helped me to overcome my irritable bowel syndrome (which I was diagnosed with at 10 years old) but has given me so much more energy and generally made me feel a whole lot better.

As I had experienced the power of how foods can make me feel, both the good and the bad in terms of my health, I was eager to learn more.  This led me to the Institute of Integrative Nutrition in New York to train as a Holistic Health Coach.  I then enrolled at the Academy of Culinary Nutrition in Toronto to become a Culinary Nutrition Expert.  Using the knowledge and skills I gained helps me immensely in the kitchen when creating recipes for the website, clients and myself.

I’m passionate about eating healthfully and want to show that ‘healthy’ food doesn’t have to bland, expensive or difficult to cook.  You’ll find lots of recipes on my website that use everyday ingredients to make nourishing, wholesome meals and snacks.

I hope you get as much enjoyment out of making my recipes as I do creating them.
