So, you may have noticed that I haven’t posted a new recipe on here for a while and that certainly wasn’t planned. Unfortunately, I was struck down with a case of labyrinthitis and haven’t been able to do much for the past few weeks. Fortunately, the worst has now passed and I’m back to recipe testing – yay!
I certainly didn’t think I’d be sharing a smoothie recipe with you at the tail-end of winter. I have lots ideas noted down of recipes I wanted to test and share with you before we head into spring – soups, stews and the like – however, with labyrinthitis I wasn’t able to stand up much without the overwhelming dizziness but I did develop a love for smoothies.

This dairy-free smoothie became a firm favourite, the avocado makes it lovely and creamy and the cucumber and kiwi go so well together. If you prefer a sweeter smoothie, or are trying to get those with a sweet-tooth to try it add a date to the mix to sweeten it up.
Kiwis are a great source of vitamin C which helps support our immune system. They are also a good source of fibre, helping our gut-health and can have a mild laxative effect.
Kiwi, Kale & Cucumber Smoothie
- 2 kiwis peeled & halved
- 1 large handful kale tough stems removed & washed
- 1/4 English cucumber washed & chopped
- 1 Tbsp. ground flax
- 1/2 cup dairy-free milk
- 1/2 small avocado
- Place all ingredients into a high-speed blender and blend until fully combined.
- Serve immediately.
