I was a bit hesitant to call this a recipe as it is incredibly easy. However, for something so simple it tastes delicious and I had to share it with you.
My serving suggestion for this dish is to have the strawberries with some coconut yoghurt but they would also be delicious in meringue nests or as an accompaniment to my melting chocolate pots.
This dish can easily be doubled or tripled so great to finish a dinner party with as it’s full of flavour yet not too heavy.
Strawberries are packed full of goodness. They are a great source of vitamin C and contain B vitamins in addition to a number of minerals including potassium. Strawberries are also rich in antioxidants which can protect our cells from damage.
-2 cups strawberries, washed, hulled and sliced
-1 Tbsp. rose water
-2 Tbsp. shelled pistachio nuts, roughly chopped
-coconut yoghurt or any dairy-free yoghurt to serve
How To Make
Place the sliced strawberries in a bowl and pour over the rose water and gently mix.
Allow the strawberries to sit in the rose water for at least an hour to infuse with flavour.
Dollop 3 heaped tablespoons of yoghurt on each plate and smear with the back of the spoon, then top with some sliced strawberries. Scatter over the chopped pistachios.
