French toast used to be such a treat for me when I was younger. I usually had it when I was visiting one of my Grandma’s, it was either French toast or cereal from a multi-pack, I used to love those little packets of cereals and to be able to pick which one I wanted each morning…the excitement!
Let’s be honest though, most commercial breakfast cereals aren’t the healthiest way to start the day, most are loaded with added sugars and the recommended portion size for most cereals is more like a canape for me! They never seemed filling and I was so hungry within 30 minutes of having a bowl of cereal, needless to say, I don’t buy or eat cereal anymore!
This French toast, however, is filling and delicious. It’s great as a breakfast or part of a brunch if you have friends or family around yours. I like to serve this with my berry compote but any seasonal fruit and/or dairy-free yoghurt goes well.
Cinnamon help can aid digestion and help balance blood sugar. Additionally, it can help fight bacteria and viruses due to its antiseptic properties.
-1 ripe banana
-1 tsp. ground cinnamon
-pinch of salt
-4 slices gluten-free bread
-2 tsp. coconut oil (or oil of your choice with a smoke point)
How To Make
Place the eggs, banana, cinnamon and salt in a blender and blend until smooth. Pour mixture into a shallow dish.
Place a frying pan over a medium heat and heat one teaspoon of oil.
Dip a slice of bread into the mixture ensuring both sides are coated, then place in the frying pan. If there’s room, add two slices of bread to the pan at the same time.
Fry the bread on each side for 2-3 minutes until golden brown. Once done, set aside on a plate and cover to keep warm.
Repeat the process for the remaining slices of bread, adding the remaining teaspoon of oil for the last two slices.
Serve immediately with fruits, yoghurt or toppings of your choice.
