Berry Compote

Berry compote, sauce, dessert, plant based, gluten free, vegan, vegetarian

Four ingredients are all that is needed to make this compote.  Enjoy it swirled through yoghurt, with pancakes, with chia pudding or with my cinnamon-spiced banana french toast.

-2 cups frozen mixed berries

-2 tsp. ground cinnamon

-1 star anise

-1 Tbsp. maple syrup (optional)

How To Make

Place the berries in a pan over a medium heat and warm gently.  Stir often so they don’t catch the bottom of the pan.

Once the berries have broken down and released their juices, add the cinnamon and star anise and give the mixture a mix.

Taste test the compote and if needed, add the maple syrup (sometimes you won’t need to sweeten it as the berries will be sweet enough).

Allow the mixture to simmer gently for 10-15 minutes until the mixture has reduced and is starting to thicken (it will thicken more as it cools in the refrigerator).

Once cooked, pour the compote into a lidded jar and store in the refrigerator for up to 7 days.
