Sometimes there is nothing better than a couple of slices of toast smothered in jam. My Gran used to make an amazing raspberry jam that I’d have on toast, scones, swirled into yoghurt..basically I’d try and slather it onto anything it was so good!
For this recipe, I’ve suggested up to two tablespoons of maple syrup as a sweetener but you may not need this amount or any at all depending on how sweet the berries you are using are.
-2 cups frozen mixed berries
-3 Tbsp. chia seeds
-1 to 2 Tbsp. maple syrup
How To Make
Place the berries and one tablespoon of maple syrup in a small pan over a low to medium heat.
Allow the mixture to cook down – up to 10 minutes – stirring occasionally.
When the berries have fully softened, check the jam for sweetness and if needed, add the other tablespoon of maple syrup (depending on the sweetness of the berries you may not need the full 2 tablespoons worth). Add in chia seeds and stir to combine. Allo to cool
You can either leave the jam as is or, if you prefer a smoother jam, blend with a hand blender or in a high-speed blender.
Pour jam into a storage jar and allow to cool before storing in the refrigerator.
Keep in the fridge for up to 7 days.
