These ice lollies are lovely and creamy thanks to the coconut milk and they taste delicious. They take no time to make, the hardest part is waiting for them to set!
If you don’t like peaches, I think most fruit would work. I may try mango in my next batch and pretend I’m somewhere exotic whilst enjoying one!
Peaches are considered an uplifting fruit in China where they originate from. Peaches are a good source of vitamin C and can help remove excess water from the body. They also have a mild laxative effect.
-4 peaches, stones removed
-1 can full-fat coconut milk
-1/2 tsp. vanilla extract
-1 or 2 Tbsp. maple syrup or sweetener of choice (optional)
How To Make
Place ingredients except for maple syrup in a blender and blend until smooth.
Taste the mixture and if it’s not sweet enough add some maple syrup and blend again. Sometimes the peaches are sweet enough that additional sweetener isn’t needed.
When the mixture is ready pour into moulds and place in freezer to set.
Store in an airtight container in the freezer.
