Fun fact: Kiwi fruit is not my favourite fruit. In fact, I go through phases of liking them and then avoiding them for months.
Luckily I am loving kiwis at the moment, I say luckily because this chia pudding was born out of my current phase of liking kiwis. Originally I was going to make a smoothie then I changed to the recipe to make a chia pudding and oh em gee it is really good. Whizzing it up in the blender makes it wonderfully light and creamy.
Kiwis are a great source of vitamin C which helps boost immunity and combat inflammation. Kiwis are also a great source of dietary fibre that can help aid digestion and maintain colon health.
-2 kiwis, peeled
-1/2 cup coconut milk (from a carton, I use Rude Health brand)
-2 Tbsp. dairy free yoghurt (I use Co-Yo coconut yoghurt)
-2 Tbsp. chia seeds
How To Make
Place the kiwis, milk and yoghurt in a high-speed blender and blend until smooth (you won’t get it completely smooth because of the kiwi seeds but you want the kiwis pureed)
Whilst everything else is in the blender, add the chia seeds to a bowl.
Pour the blended kiwi, milk and yoghurt mix over the chia seeds and stir to mix well. Cover and place in the refrigerator overnight.
Top with nuts/seeds/desiccated coconut and/or berries.
