Mint Chocolate Pots


The third Monday of every January has been named as Blue Monday as apparently, it is the most depressing day of the year, this year it falls on the 16th.

Whether this is true or not about blue Monday or another marketing ploy, here is a recipe that can help make us feel good and can be enjoyed on any day of the year.

Cacao is packed full of health benefits; it is the highest source of magnesium which is a natural muscle relaxant.  Cacao contains chemicals such as anandamide and phenylethylamine which give us the feel good factor…you know that feeling you get just after working out or when you fall in love?  You can thank those chemicals!  Plus, cacao is high in antioxidants…and it tastes so good!

Serves 2


-2 Tbsp. chia seeds

-1 ½ Tbsp. organic maple syrup

-3 Tbsp. organic raw cacao powder

-1 ripe banana (starting to brown as this adds sweetness)

-3/4 cup almond or coconut milk

-2 Tbsp. (packed) mint leaves (approx. 15 leaves)

How To Make

In a spice grinder, grind the chia seeds until fine.

Add the ground chia seeds with the rest of the ingredients into a high-speed blender and blend until smooth.

Divide the mixture between 2 ramekins and cover.

Place in the refrigerator until set, minimum 1 hour.

Serve chilled.
