As I’m sitting writing this recipe, the sun is out and it is a beautiful day. Which got me thinking, should I actually post this recipe just now or hold off? Since this is a warm dessert/snack and often when it’s warm we want something which will cool us off, yet, it is super delicious that I wanted to share it with you as soon as possible! And, it can be enjoyed cold too or warm with ice cream…yum!
Heating the peach and banana releases their natural sugars which is why you don’t need to add any sweeteners, this will satisfy even those with the sweetest tooth. As I mentioned above it is also nice cold and makes a great breakfast with some nuts/seeds and yoghurt.
I’ve noted that this recipe serves one but it could be easily shared between two – although sharing is completely optional!
Peaches not only taste good they are packed full of goodness. The compounds which they contain are known to help fight metabolic syndrome (metabolic syndrome is a group of risk factors which can lead to diabetes, stroke and heart disease). Peaches are also a good source of vitamin C and they are great for skin and eye health.
-1 heaped tsp. coconut oil or grass fed butter
-1 ripe peach, stone removed and cut into 8 pieces
-1 small banana, peeled and thickly sliced
-ground cinnamon for sprinkling
How To Make
Place a small frying pan over a medium heat and melt the coconut oil (or butter).
Once the oil has melted place in the peach slices and cook until starting to brown, turning the pieces often.
Once the peaches start to brown, add the banana and cook until starting to brown too.
Remove the pan from the heat and sprinkle over the cinnamon and serve the fruit with some coconut yoghurt.
